Equipment:
- bowl
- whisk
- 10-inch cake tin
- baking paper
- silicone spatula
- cooling rack
Ingredients:
- 2 large apples
- 2 eggs at room temperature
- 1/3 cup brown sugar
- 1/2 cup unsalted, melted butter
- 1/2 cup applesauce
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1 pinch of salt
- flaked almonds (optional)
Let's Make the Best Apple Tea Cake:
Step 1:
First, melt the butter (you can use the microwave) and let it cool.
Step 2:
Preheat your oven to 180°C. Line the bottom of a cake tin with baking paper, then lightly grease the sides of the tin with soft butter.
Step 3:
Peel the apples, remove the core, and cut into small cubes. Set aside.
Step 4:
Place the eggs and brown sugar in a large bowl and whisk until frothy. This will help make the cake light and moist.
Step 5:
Add the melted butter and applesauce and mix until combined.
Step 6:
Mix the dry ingredients – flour, baking powder, salt, and cinnamon. Stop mixing as soon as it comes together to avoid overworking the batter.
Step 7:
Place the sliced apples in the cake tin. You can reserve about a quarter of the apples to use as a topping. Pour the prepared mixture over the apples and spread it evenly in the tin using a silicone spatula.
Step 8:
Cover the cake with the remaining apple pieces and sprinkle with a few flaked almonds for extra crunch.
Step 9:
Bake for 30-35 minutes or until a knife comes out clean and the edges are slightly golden.
Step 10:
Place the apple tea cake on a cooling rack and let it cool completely before removing it from the tin. Sprinkle it with some powdered sugar before serving.
Additional tips that may come in handy when preparing this delicious apple tea cake:
- In addition to cinnamon, you can also add some ground ginger, a pinch of nutmeg, or any of your favourite spices to the cake.
- Apples can be cut into cubes of different sizes. The small pieces will become extremely soft, while the larger cubes will remain slightly crunchy.
- For an additional mix of flavours, you can use two different varieties of apples instead of one. For example, choose a sweet apple and a tart one.
- If you wish to enhance the flavour of the mixture, consider adding a moderate amount of rum, typically 1 to 2 tablespoons.
Enjoy your meal!
