A sinfully good and rich dessert that satisfies everyone’s taste buds. The soft and delicate crust and the excellent mousse are the main reasons why many people drool when they think of Caramel Mousse Gold Tarts. Also, preparation takes less time than you might think.

- Tray of 6 Silicone dome moulds
- Spatula

Here’s what you will need for Caramel Mousse Gold Tarts:
- 6×4 inch ready-made shortbread
- Tart shells
- Dulche de Leche Spread
- Ripe Banana
Caramel Mousse:
- 250g Whipped Cream
- 50g Vizyon Neutral Charlotte Powder
- 62.5g Water
- 10g Vizyon Caramel Concentrated Pastry Paste
Glaze Topping:
- Gold Mirror Glaze

Let’s start:
Step 1:
Firstly, whip the cream until it forms soft peaks – don’t overwhip it as you will want it slightly pourable to enable you to fill the moulds evenly.
Step 2:
Mix the Neutral Charlotte powder and water together using a whisk until incorporated and runny. Then mix in the Charlotte mix.
Step 3:
Take approximately 10g of Caramel Concentrated Paste (depending on your preferred taste) and fold it into the mousse cream mixture.
Step 4:
Pour the mousse mix into the Silicone dome moulds and refrigerate and freeze overnight.
Step 5:
Next day – Cut a banana into 30 thin slices, each about 3mm thick. Place 5 slices of banana into the bottom of each shortbread tart casing, to cover the base.
Step 6:
Warm the Dulce de Leche spread in a microwave until it’s spreadable. Spoon a dollop of Dulche de Leche into the tart shells on top of the banana slices and spread out.
Step 7:
Prepare a wire rack with a drip tray underneath. Demould the caramel mousse domes from the silicone tray onto the wire rack.
Step 8:
Carefully lift the glazed dome from the wire rack and place it into the filled tart casing.
Step 9:
Decorate with edible dried flowers or chopped chocolate pieces on top.
