  • Warm milk | 135ml
  • Caster sugar | 220g
  • Eggs | 3
  • Self-raising flour | 300g
  • Softened unsalted Butter | 135g
  • Grated lemon rind
  • Vizyon Lemon Concentrated Pastry Paste | 15ml
  • Vizyon Neutral Mirror Glaze
  • Sliced lemon for decoration

How to make Lemon Tea Cakes

  1. Begin by preheating your oven to 180°C and make sure your baking tray is lightly greased to prevent the cakes from sticking.
  2. Mix the warm milk and poppy seeds together in a bowl. Let the mixture sit for 15 minutes – this will give the milk the nutty and earthy flavour of poppy seeds.
  3. Mix in caster sugar, eggs, flour, butter, lemon rind, and Vizyon Lemon Concentrated Paste with the poppy seeds and milk.
  4. To make sure it’s all combined, beat it together for 5 minutes with the mixer on high speed until the mixture is pale and thick.
  5. Evenly distribute the well-combined mixture into the loaf pans, making sure to pour it in smoothly and without any lumps.
  6. Pop them into the preheated oven and bake for 40 minutes
  7. Once your Lemon Tea Cakes are perfectly baked and golden brown, it’s time to let them cool down. To do this, carefully remove the loaf pan from the oven and place it upside down on a cooling rack, with a drip tray underneath. Allow them to cool down completely.
  8. When the cakes are cooled down, add toppings. Place lemon slices on top of the loaves and then brush or pour the mirror glaze over the cakes, making sure to cover the surface completely.
  9. Serve and enjoy with a cup of tea.
