Ingredients:
- 175 g Soft Butter
- 100 g Golden Caster Sugar
- 1 Large Egg Yolk
- ½ tsp Vanilla Extract
- 1 Lemon Peel
- 250g Plain Flour
- ½ tsp Salt
- Icing, Icing Tubes, and Sprinkles
It’s time to start preparing:
Step 1:
Let’s start by beating the butter and sugar until the mixture turns pale and creamy. Then, you add the yolk, vanilla extract, and lemon peel to the mixture and stir well. Sift the flour and salt into a bowl and mix into a soft dough. Divide the dough into two flat discs and wrap it tightly in cling film. Chill it for 30 minutes or until firm (but be careful not to let it become hard). Meanwhile, preheat the oven to 180°C and line two baking pans with baking paper.
Step 2:
Flour the work surface and roll out the dough to a thickness of 5 millimeters. Then, press the cookie cutters into the dough and remove the excess around the cutters. Roll out all the trimmings again and repeat the process until you have no more dough left for cookie-cutting.
Step 3:
Bake for 12 minutes, one baking pan at a time, until the cookies are golden. Then leave them on the baking pan for 5 minutes before lifting them to the wire rack. Use a spatula to remove them and cool completely.
