If you’re not sure which type of flavouring to use here is a good rule to follow: Use oil based flavouring for the fat-soluble bases (chocolate, buttercreams…), and use water-based food flavouring for water based foods and beverages (smoothies, jams, also frosting). Flavouring emulsions can be used for foods that require baking, as well as foods as don’t since these are alcohol free (hard lollies, fondants, dairy products).
